| Potatoes (aloo) | 500 g, boiled and cubed |
| Refined oil | 2 tbsp |
| Cumin seeds (jeera) | 2 tsp |
| Green chillies | 2, finely chopped |
| Bhavo Turmeric Powder | 1/2 tsp |
| Bhavo Red Chilli Powder | 1 tsp |
| Salt | 1 tsp or to taste |
| Garam masala | 1/2 tsp |
| Dry mango powder (amchur) | 1/2 tsp |
| Fresh coriander leaves | 2 tbsp, chopped |
| Lemon wedges | For serving (optional) |
Steps
Step 1: Prepare the Potatoes
Time: 10 minutes
- Wash and boil the potatoes until just tender. Peel and cut them into medium-sized cubes.
- Keep the potatoes aside and allow them to cool slightly before cooking.
Step 2: Temper the Spices
Time: 5 minutes
- Heat oil in a pan. Add cumin seeds and let them crackle.
- Add green chillies and sauté for 30 seconds until aromatic.
Step 3: Add the Seasoning
Time: 3 minutes
- Add Bhavo Turmeric Powder, Bhavo Red Chilli Powder, and salt.
- Mix quickly on low heat to prevent the spices from burning.
Step 4: Cook the Potatoes
Time: 8 minutes
- Add the boiled potato cubes and toss gently until they are evenly coated with the spices.
- Cook for 6-8 minutes, stirring occasionally, until the potatoes become lightly crisp.
Step 5: Finish the Dish
Time: 3 minutes
- Sprinkle garam masala and dry mango powder (amchur), then mix gently.
- Cook for another minute to blend the flavors.
Step 6: Garnish & Serve
Time: 2 minutes
- Garnish with freshly chopped coriander leaves.
- Serve hot with roti, paratha, dal-rice, or enjoy it as a side dish.
